Neuchâtel - Non Filtré 2025

Domaine Saint Sébaste is a family estate located in Saint-Blaise in the canton of Neuchâtel, Switzerland. The 20-hectare vineyard is farmed biodynamically and has been DEMETER certified since 2015. The estate emphasizes varietal purity and parcel-based vinification.

The Neuchâtel Non Filtré is a regional specialty bottled in January following the harvest and deliberately left unfiltered. Made traditionally from Chasselas, it retains a natural slight cloudiness, which defines the authentic Non Filtré style. The wine is produced under the AOC Neuchâtel designation.

Appearance: Pale lemon color with natural slight turbidity and silver reflections.

Nose: Fresh aromas of citrus, green apple and white flowers, with subtle yeasty nuances from the absence of filtration.

Palate: Crisp and lively attack, smooth texture, vibrant minerality and refreshing saline finish.

Food Pairing: Aperitif, lake fish (especially perch fillets), seafood, Swiss fondue or raclette.

Serving Temperature: 8 – 10°C.
