A perfect combination that gives this vintage all its subtlety, thanks to more than eight years of aging in the cellar. It then achieves perfect harmony. The low dosage of this wine using a liqueur expertly prepared by the Cellar Master as well as its long aging after disgorging for a minimum of 12 months give it its maturity and richness, and allow the full expression of Chardonnay, a grape variety. emblematic of the refined and daring style of the House.
Tasting
To the eye: Dress of a beautiful pale gold shine with crystalline reflections
On the nose: A first very mineral nose, chalky with notes of citrus fruits, hazelnuts and fresh almonds. The second nose then reveals notes of spices, tonka bean and nutmeg, always supported by a nice freshness. After several minutes, aromas of stone fruits, mocha and praline pastry accents are expressed.
On the palate: The attack is full-bodied and the verticality in the mouth echoes the minerality felt on the nose. The salty and iodized notes of great finesse, accompanied by touches of lemon and citrus give way to notes of spices which support the warm finish of a very good length and reveal the perfect harmony which emanates from this wine.
Food & Wine Pairring : This great Champagne wine will sublimate all gastronomic moments and will accompany the flavors of the most refined dishes. Its salty side will go perfectly with a citrus scampi tartare or a poached turbot fillet. Versatile, its spicy finish is the perfect accompaniment to lightly spiced chicken breasts or a veal medallion with morels.
