The Billecart-Salmon Champagne House, founded in 1818 in Mareuil-sur-Aÿ, is one of the few prestigious Champagne houses that remain both family-owned and independent, preserving a centuries-old expertise and a finesse acclaimed around the world.
The Brut Sous Bois cuvée is a unique and captivating expression of traditional Champagne craftsmanship: it is entirely vinified and matured in oak barrels, which brings a distinctive aromatic complexity and a silky texture. Made from all three classic Champagne grape varieties, it combines the purity of the region’s style with a subtly oaked, rich and profound personality.
Tasting
Appearance: Crystal-clear golden yellow robe, animated by fine, regular and persistent bubbles — a sign of excellent maturity and meticulous aging.
Nose: Complex aromatic richness with notes of pastry, fresh citrus, orchard fruits, evolving into hints of malt, mocha and bergamot — all reflecting its barrel aging.
Palate: Creamy and refreshing texture, bursting with delicate flavors (milk rolls, melted butter, sweet spices, toffee), with a harmonious balance between liveliness and roundness.
Food Pairing: Refined seafood (oysters, scallops), shellfish, poultry in sauce, mushroom risotto or aged hard cheeses.
Serving Temperature: Recommended at 10 °C to fully appreciate the aromatic complexity and finesse of the bubbles.
