Since the 1980s, Jean-Michel Novelle has developed a viticulture that respects the plant and has completely overhauled the Grand Clos vineyard. He set up an experimental laboratory for new grape varieties on a small 7-hectare site in Geneva.
During the harvest, which begins when the grapes are fully ripe, the bunches are picked and sorted exclusively by hand.

Eye: Golden yellow

Nose: original, tangy and tasty attack, citrus aromas

Palate: tangy, flavoursome attack, citrus aromas, long mineral and saline finish

Food and wine pairings: Ideal with féra terrine, marinated bass, grilled red mullet, vitello tonnato, mushroom pancakes, potatoes sautéed in salted butter, fish lasagne.
